Thanks to its fertile ground and white-water springs, Saint-Bonnet-de-Salers enjoys rich, fine-grass pastures grazed by herds with "mahogany coats and lyre-shaped horns". The world-famous “Salers” breed cattle have their own museum here: The Maison de la Salers, as well as the headquarters of the Salers Evolution Group, which is responsible for selecting and promoting the Salers breed across France and internationally. This breed was "renewed" at the end of the 19th century by Tyssandier d'Escous, a native of Saint-Bonnet, who turned it into a cow that was both solid and magnificent, but also hardy and maternal.
The milk from the herds contributes to the reputation of Cantal cheese. This cheese is made exclusively by local farmers and the local dairy cooperative, it is one of the jewels in our region's crown.
The village also boasts a 12th-century church with a gable bell towed, and a number of typical houses hidden away in the depths of the village and surrounding hamlets. Peaceful walks along winding paths through meadows where gentian, wild carnation and foxglove grow, where you will discover these "natural wonders" after having rested in one of the village’s many welcoming accommodation facilities and tasted it’s culinary specialities.
