A country with rigorous winters, agriculture in the Cantal county is characterised by the transhumance of cattle to the high altitude meadows (the “estives”) in summer. On these plateaus, men built the “burons”, the Cantal equivalent to the high mountain pasture chalets in the Alps, to allow cheese making during the summer season.
